(all ingredients can be adjusted to make more or less, it is a very versatile recipe)
extra virgin olive oil (about 2 tbsp)
1-1.2 lbs beef stew meet, in 1inch pieces
6-7 carrots, peeled, cut into small pieces
6-7 potatoes, peeled, cut into small pieces
2 tbsp tomato paste
3 tbsp (roughly) of better than bouillon roast beef base
6 cups water (enough to cover your beef and veges)
optional: garlic powder, dried oregano (i used 1 tsp)
Cook in dutch oven for 2-4 hours on low, longer the better. This can also be cooked in the crockpot/slowcooker for 7-8 on low, or 4-5 on high. Enjoy!
